Healthy Snacks – Quinoa Coconut Bars
● ¾ cup quinoa, uncooked
● ¾ cup oatmeal, uncooked
● ¼ cup quinoa flakes
● ½ cup unsweetened shredded coconut
● ½ cup almonds, chopped
● ½ cup crunchy natural peanut butter
● ¾ cup honey
● 4 squares dark chocolate, melted
Preheat the oven to 350 degrees. Onto a cookie sheet (lined with parchement paper) place the quinoa, quinoa flakes and the oatmeal, stir once and bake for 8 minutes. Meanwhile, in a small saucepan add the peanut butter and honey and heat over medium or low heat until melted.
Remove the quinoa and oatmeal from the oven and in a large bowl mix them with nuts and coconut. Over the mixture pour peanut butter and honey sauce and stir to combine. Press the resulting into a 8×8″ baking dish (covered with parchment paper) and bake for 20 minutes until the edges are slightly browned.
Remove the baking dish from the oven and allow to cool it for 40-45 minutes.
