Healthy Mayonnaise Recipe

  • Four egg yolks at room temperature
  • One tablespoon apple cider vinegar or lemon juice
  • One teaspoon regular mustard
  • Pepper and salt
  • ⅔ cup olive oil
  • ⅔ cup healthy oil (warm coconut oil works well)


Bowl and whisk the egg yolks until smooth or simply put them in a blender. Add vinegar or the lemon juice, mustard, salt and pepper and blend until mixed. By whisking or blending at low speed, SLOWLY add oils, one drop at a time (starting with olive oil) until it begins to emulsify and all oil is incorporated. Store in refrigerator up to one week. Enjoy!
