Spinach pancakes

Spinach pancakes

Ingredients:

  •  10.5 oz/300 g flour
  •  2 cups/500 ml milk
  •  2 tbspoons butter
  •   2 cups/500 ml sour cream
  •  2 little garlics
  •  2 eggs
  • 1,7 oz/50 mil oil
  • 5.5 oz/150 g spinach
  • 3 eggs
  • 2 little onions

Directions:

You can cook this for breakfast and dinner. Mix the eggs, the milk, the flour and the oil in a big bowl. Put spices if you want to. In a heated pan, fry the onions with the previously blended spinach. We fry it a little and then let it cool. After it’s cooled we put the spinach in the mixture of eggs and flour.  We mix it all together and we fry the pancakes. When they’re done, we put some cream and granulated boiled eggs on top, we roll them and serve them.  Bon Appetit!

Spinach and mushrooms risotto

Spinach and mushrooms risotto

Ingredients:

  • 10.5 oz/300g rice
  • 7 oz/200g spinach
  • 8.8 oz/250g fresh mushrooms
  • 1 small onion
  • 1 carrot
  • 2 tablespoons parsley
  • 2 spoons parmesan cheese
  • 1 oz/30g butter
  • salt and pepper

Directions: In a heated pan, put the chopped onion, mushrooms and the carrot. Fry them until they soften and then add the rice and the parsley. Put 2 or 3 small cups of hot water and mix everything.

If needed, you can add more water. Put the previously boiled spinach in a blender. After it’s done put the spinach in the pan with the rice. Add the butter and the cheese in the end. Mix until they’re melted and serve.

Spinach salad

Ingredients:

  • 1.16 lbs/500 g boiled spinach
  • 2 granulated carrots
  • 10.5 oz/300 g fried peanuts

Directions: 

Spinach salad

Boil the spinach, then chop it and put it in a blender. Blend the peanuts too but separately.  Fry the sesame until it gets a sort of caramel color. Put everything in a big bowl, including the boiled, granulated carrots too and add the mayo.  Enjoy your salad!

 

 

 

 

Spinach and potato Croquettes

Ingredients: 

  • 2 mashed potatoes
  • 10.5 oz/300 g spinach
  • 1 egg
  • 2-3 tablespoons  flower
  • ½ tablespoon of baking soda
  • ½ flax seed

For frying: 

  • 1 egg
  • 3.5 oz/100 g flour
  • 3.5 oz/100 g breadcrumbs

Directions: Mix the potatoes, the spinach, the flour, the egg and the baking soda in a bowl. Make the croquettes then dip them into the flour, the egg and breadcrumbs. Fry them in a pan. Serve them with yogurt.

Ingredients: 

  • 1.16 lbs/500 g spinach
  • 3.5 oz/100 g rice
  • 1.7 oz/50 ml olive oil
  • chilly or cumin
  • some garlic
  • 1 tablespoon flour
  • 1 glass of water

Directions: 

Wash and chop the spinach. In a heated pan, put some olive oil, the chopped spinach, some seasoning and fry it until it gets soft. Add the rice and fry it some more, then add the water and let it boil. In a glass of water, add the flour and then add this mixture into the spinach and rice. Let it boil for 20 minutes. You can eat this with yogurt or cream. Enjoy!

Quinoa and spinach muffins

Quinoa and spinach muffins

Ingredients: 

  • ½ cup of Quinoa
  • 1cup water
  • 8.8oz/250 g spinach
  • 4 eggs
  • 1 tablespoon olive oil
  • ½ tablespoon oregano
  • some pepper
  • 5.3oz/150 g goat cheese

Directions: Boil the Quinoa for 15 minutes covered with a lid. Mix the eggs with the granulated goat cheese, the chopped spinach, the oregano, the olive oil and the boiled quinoa. Add some salt and pepper. Fill your molds with the mixture and put them in a preheated oven. Bake for 15-20 minutes.

Baked spinach with cheese

Ingredients:

  • 2.3lbs/1000g spinach
  • 7oz/200g cheese
  • 1oz/30 g flour
  • 2.8oz/80g butter
  • 1 ¼ cup/300 ml milk
  • salt and pepper

Directions: Wash the fresh spinach and then boil it for 3 minutes. In a separate pan, mix the butter, the flour and the milk (this is the béchamel sauce). Add some salt and pepper. In a big pan add the spinach and the béchamel sauce and the granulated cheese. Heat the oven on 180degrees and bake for 20 minutes.
